Golden Gin Supreme by Boris Gröner

4 cl Lemongrass – Raspberry Spirit
0.5 cl Gin concentrate
3 cl Mandarine Syrup
2 cl Lemon Juice
5.5 cl Kessler Hochgewächs (a local sparkling wine from Chardonnay grapes)

Subrecipe for Lemongrass Raspberry Spirit
150 grams Lemongrass
2 liters Raspberry Spirit

Crush the lemongrass with a wooden hammer and mix with the raspberry spirit
Sous vide mixture at 72° Celsius for 120 min—let it cool down and filter. Yields approx. 2 liters

Subrecipe for Gin concentrate 
1 l Neutral Alcohol (62%)
25 grams Szechuan Pepper
5 grams Cubeb Pepper
13 grams Juniper Berries
5 grams Licorice

Roast both peppers in a pan for a short time. Add them with the rest of the ingredients to a mortar and pestle all ingredients. Mix with the alcohol. Rotovap at 50° C. Pressure beginning: 120mBar / 75 rpm / -10° C. Pressure end: 30mBar

Subrecipe Mandarine Syrup 
1 kg Mandarine Puree
1.5 kg Sugar
0.5 l Water

Put all ingredients together, finestrain and store. Yields 2.5 liters
