This was a drink Katie created years ago using what she thinks is a ‘benchmark’ Manzanilla sherry, Hidalgo La Gitana. It is a lower ABV cocktail with the sherry as the featured ingredient. The name of the drink is a reference to the Andalusian horses, which historically the thoroughbred is also referred to as the ‘War Horse’. Javier Hidalgo of Bodega La Gitana is a very successful horse jockey in his home town of Sanlucar de Barrameda (where Manzanilla sherry originates).
6 cl Hidalgo La Gitana Manzanilla Sherry
1.5 cl Old Tom Gin
1.5 cl Cocchi Americano
0.75 cl Carpano Antica Vermouth
0.75 cl Benedictine
1 dash Orange bitters
Stir all ingredients with ice & strain into a chilled Coupe glass
Finish with a lemon twist
