Kwaśna Marta by Pawel Rodnaszynski

Kwaśna Marta (Martha Sour) was created by my friend Arek Stefaniak in 2012 at Pies Czy Suka. He died in 2014, but with this cocktail we are going to keep the memory of him alive.

6 cl Ruby port
2 cl Lemon juice
1 cl Maple syrup
2 Barspoons plum jam 

Foam recipe:

150 ml Vodka
80 ml Sugar syrup (2:1)
160 ml Lemon juice
100 ml Water
Around 2 gr Cellulose
1 gr Xantan

Use blender at low power to mix all ingredients. Put into nitrogen syphon with two N₂O cartridges.

Method: Shake all ingredients
Afterwards use smoking gun with French oak chips to smoke cocktail
After 10–15 seconds pour into a short glass with iceTop up with foam
