1.5 cl Pineapple Shrub
1.5 cl Campari

Subrecipe for Pineapple Shrub
Peel pineapple and cut in medium pieces. Mix 2 parts caster sugar and 1 part pineapple in a bowl and mash it all together by hand (the most important part is to use your hands instead of a blender or mixer, because this way all the aroma is preserved). Put a cover on the bowl and put in the fridge for 12 hours. Afterwards strain through a cloth. Add some apple cider vinegar into the resulting syrup. Constantly taste when adding vinegar as the sweetness of the pineapple may vary. Approximately 100ml of vinegar for 1 liter of pineapple syrup. Fill in bottles and refrigerate.
